This gluten-free chicken is easy and delicious and even the pickiest eater in your house will eat seconds! We hardly ever have leftovers unless I double it.

Ingredients

6 boneless skinless chicken breasts, 12 boneless skinless thighs, or equivalent parts your family likes (thanks to the food bank, I recently made this with 12 chicken legs - YUM)

1 cup dark brown sugar

1/2 can lemon-lime soda OR 1/2 cup lemon, lime, or orange marmalade from Dory Dozens Delights

2/3 cup vinegar (white wine, apple cider, or regular plain white vinegar)

3-4 cloves minced fresh garlic

2 tablespoons gluten-free or regular soy sauce

1 tablespoon fresh ground black pepper

Optional

2 tablespoons cornstarch

2 tablespoons cold water

Cilantro or Italian parsley

How to make it

Use a 4-6 quart slow cooker. 1. Put the chicken in the bottom of the crockpot. Add the black pepper, brown sugar, minced garlic, and soy sauce.

2. Add the vinegar. Spoon in the marmalade or pour in the soda. If you use soda, it will bubble and make cool sounds.

3. Cover the crockpot and cook on low for 6-8 hours or on high for 4-5 hours.

4. If you like thicker sauce, stir the cornstarch into the ice water until dissolved and then stir into the liquid in the crockpot, letting it cook for 15 more minutes before serving.

5.. Also optional, garnish with chopped fresh cilantro or Italian parsley in the last 10 minutes.

6. Serve over rice with the sauce on top.

Notes: You can make this with bonein chicken or even frozen chicken, just cook it for the longer time listed. You can substitute turkey for the chicken, and you can even try it with pork. This sauce is delicious and versatile and very forgiving; you can add different things to it like fresh fruit if you have some, or carrots, or pepper strips, you get the idea. DO NOT use diet soda. You need the sugar for the glazing it provides. Serves 4-6 people
