PEAK TO PEAK - Mama Roo’s food truck is making an impression in Nederland as a locally-owned spot for comfort food. The menu has items ranging from empanadas to egg rolls. All are designed to give customers the sensation of a home-cooked meal.

Behind the scenes of the food truck are two female chefs, Jenny Marcus and Ari Lazo. They have lived in the area for a combined 25 years. Both women have worked in kitchens since the young age of 15. They always knew that one day they wanted to become restaurant owners. In adulthood, they attended culinary schools and crossed paths while working at Eldora. They soon got to know each other and brainstormed ideas. Eventually, the concept of Mama Roo’s was born.
On June 9, 2024, Mama Roo’s began operation. Since then, the business has gone from operating one day per week to four. Now, they have an expanded menu and local followers.
Some of the menu (https://www.mamaroos.biz/menus) items change according to the location and weather. The business's signature offering has always been unique sauces. Homemade sauces include malt vinegar aioli, pickled scallion aioli and garlicky dill pickle.
Mama Roo’s menu items are simple, but their special sauce varieties add flavor, setting the food truck apart from its competitors. Additionally, appetizers are always served. Options include French fries, soups, and grilled cheeses. If a furry friend is along for the ride, they even offer $2 pup cups.
Mama Roo’s dishes are made from high-quality fresh-sourced ingredients. The owners said they drive to Denver in pursuit of the best meats, breads, spices, herbs, and veggies. No matter the season, the business prioritizes getting these fresh-sourced ingredients all year long.
According to the owners, “We are yummy in the tummy” is their favorite motto.
In 2025, Mama Roo’s hopes to refresh its menu every few months. Additionally, they want to commit to serving in regular weekly locations, making them easier to find. They also want to travel to locations up to 30 miles away during the warmer months of the year.
