If you love locally-sourced, non-GMO, and organic food, The Dynamite Shack is the place to find it.
Otis Rainey and Charles Swartz wanted to bring “more of a farm to table establishment to the mountains….Our business focuses on local farm to table sourced foods.”
In business for seven months, Rainey and Swartz say that they are growing at a moderate pace. Recently moved from a location near RTD to one just off Hwy 119, the partners expect that they will pick up more business this summer.
They are amazingly ambitious for a food truck. Here’s what they have to say about their culinary offerings: “We offer non-GMO and organic food. We also feature monthly menu changes that utilize ingredients that are in season at the time. We do not order food that comes from outside the USA and try to source as much local meats and produce as we can.
“Almost all of our food, with a few exceptions, comes from Colorado. We are currently in the process of using mostly produce grown in Gilpin County. Beef from Magnolia Grass Fed is featured on our menu. Other proteins such as chicken, duck and others are being sourced from Boulder County.
“The menu is built around what we can get seasonally. For example, our potatoes will be grown in Gilpin County this year.” The menu will change monthly, to bring in the flavors of the season.
Though their clientele is pretty much limited now to “locals” from Gilpin County to Allenspark, they expect to see folks from a wider range as the summer months approach.
Both Swartz and Rainey call themselves “mountain people.” They live in Ward, and wanted their image to reflect the local mining heritage – hence Dynamite Shack. Besides, “We serve food that is Dynamite!”
Rainey has a long background in the food industry. He graduated top of his class from culinary school in San Francisco. After that, he worked with three world-renowned chefs; he has also been an executive chef for about 15 years. Swartz has worked extensively with coffee.
Looking forward to a busy season, the partners believe “The sky’s the limit to where we could go.”
