Recipe of the Week: Salmon Black Bean Burritos

Let’s face it, in this busy world, we run all the time. Here is a simple recipe with ingredients that can almost all be found at the Gilpin County Food Pantry.

Ingredients:

1 can salmon

1 Tablespoon oil

1 Tablespoon minced garlic

6 whole wheat tortillas (any tortillas work)

1 can black beans drained

1 can diced tomatoes

1 small can chopped green chilies

1/4 cup diced onion

1/2 cup shredded cheese (additional 1/2 cup for topping, optional)

1/2 teaspoon of cumin

1/4 teaspoon chili powder

Salt, black pepper, to taste

Directions:

Preheat the oven to 350 degrees. Drain salmon, break apart in a bowl and add salt and pepper. Drain beans a sauce pan and heat on the stove at medium low heat. Add cheese, spices, onions, garlic, green chilies and tomatoes to your pot and continue to cook for about eight minutes. Warm tortillas in the microwave for about 20 seconds; brush each tortilla with oil. Place 1/4 cup of bean mixture and another 1/4 cup of salmon. Roll it up and place in a baking pan. Repeat with the rest of the tortillas. Any black bean mixture you have left, pour on top of the burritos. Optional – top with cheese. Bake uncovered for 15 minutes. Broil for a minute or two if you want crispy cheese.
