Who’s egg-cited for the 2022 Nederland Farmers Market season? We know we are and there’s so many goodies from our diverse vendors that can be thrown into this recipe for a quick and delicious meal. This is a very general recipe that you can make your own. Double/halve when needed (this will make 4-6 servings). Change up the veggies to find your favorite flavor combos!
1/2 cup yellow onion, chopped
1/2 cup fresh asparagus, cut into 1 inch pieces
1/2 cup fresh mushrooms
4 medium-sized potatoes, diced
8 eggs
1 to 2 teaspoons green garlic, minced
2 tablespoons butter or olive oil
Salt and pepper
Optional, grated cheese
Preheat oven to 350.. Use a 12” oven-safe non-stick or cast-iron pan. Add oil to pan and sautée all of the vegetables on low-medium heat until soft, about 15 minutes, stirring occasionally. (Cover with a lid to help potatoes soften if needed). Next, crack eggs in a separate bowl and season with salt and pepper, whisk until incorporated. Pour egg mixture into veggie skillet, shake and stir until all veggies are coated in the egg mixture. If you’re choosing to add cheese to your frittata, sprinkle the top of the egg mixture with grated cheese. Bake
20 minutes until the egg is set. Enjoy!
Recipe tips and substitutions. If you do not have asparagus on hand, try 1 cup fresh spinach instead.
For a mushroom alternative, add some cooked tempeh or sausage to the egg mixture.
To easily remove the tough ends of asparagus, snap off the tough ends of the asparagus by holding 2-4 sprigs in your hands at a time and bending until they snap. The asparagus will naturally snap at the point between the fibrous and softer tissue.
Quick egg serving ideas. For a delicious egg salad, mix 4 chopped-up hard-boiled eggs with 2-3 tablespoons mayonnaise, 1 medium chopped leek or onion, 1 medium grated carrot, ¼ cup fresh chopped dill, and salt and pepper to taste.
Make your breakfast scrambles Southwest-style, by adding diced jalapeno, black beans, green garlic and onion and serve in a warmed corn tortilla.
For a classic breakfast, serve French toast. Dredge 8 slices of your favorite bread in 4 eggs beaten with 1/3 cup milk and 1 teaspoon vanilla extract. Place each slice on a griddle and top with cinnamon before flipping after 2-3 minutes. Serve with pats of butter and warm maple syrup.
