There is nothing quite as satisfying as a plate of hot, delicious potatoes. While there are infinite ways to prepare potatoes, this recipe will become a fast favorite! This recipe is fairly easy to prepare and makes a delicious main or side dish for breakfast or supper. It would be over the top with eggs and Mulay’s breakfast sausage. This recipe makes four generous main servings or six side dish servings.
Ingredients:
2 lb potatoes - yukon gold work best for this recipe, but try substituting red potatoes or yams for variety kosher salt
4 Tablespoons unsalted butter (substitute another 4 Tablespoons avocado oil or 4 Tablespoons coconut oil to keep it vegan)
4 Tablespoons avocado oil
1.5 pounds wild mushrooms such as oyster, chanterelle, lions mane
3 cloves garlic, finely chopped
1 large shallot, finely diced (no shallots? no problem! use 1/2 cup diced yellow onion) freshly ground black pepper
1/4 cup chopped fresh flat-leaf Italian parsley (reserve a few sprigs for garnish)
1 Tablespoons finely chopped fresh thyme leaves (you can substitute dried thyme as well) splash aged sherry vinegar (we used rice vinegar and it came out great!)
Extra-virgin olive oil, for garnish
Fresh squeezed lemon juice for garnish
Instructions:
1. Boil potatoes with about 2 Tablespoons of salt in enough water to cover them completely. Boil 20- 30 minutes until soft. Drain well and allow to cool slightly.
2. While potatoes are cooling, heat 2 Tablespoons each of butter and oil (or vegan alternatives) in a skillet on high heat. Add mushrooms, garlic and shallots. Cook, stirring, until mushrooms are golden brown and shallots (or onions) are tender. Remove from heat and transfer to a bowl.
3. Dice potatoes into 1 to 1 1/2 inch cubes, leaving the skins on. Heat the remaining 2 Tablespoons each of butter and oil in the pan on high heat, add potatoes, salt and pepper and cook until potatoes are golden brown and crispy. Stir in mushrooms, parsley, thyme and vinegar. Toss on high heat 1-2 minutes. Remove from heat, add salt and pepper to taste, drizzle with olive oil and a spritz of freshly squeezed lemon juice just before serving. Place a sprig of bright green parsley on the plate for color.
