Recipe of the Week: Breakfast Bake

Wondering what to do with your extra farmers market vegetables? What better way to use them than in an egg bake! Talk about easy, delicious, fresh, and completely modifiable. Have half an onion? Throw it in! Leftover tomato? Add it! Snacking broccoli that’s starting to wilt? Get chopping! We’ve created a simple, yet trustworthy recipe that will serve as your egg bake scaffold until the end of time. Modify and add as you like to create a delicious breakfast that can be eaten morning after morning.

Prep Time: 5 minutes

Cook Time: 20 minutes

Servings: 4 - 6 servings

Ingredients

4 medium-sized potatoes

1/2 cup each, eggplant, onion, bell pepper

2 Tablespoon avocado or olive oil*

*avocado oil is better for cooking due to its lower smoke point

8 eggs, whisked together

1 teaspoon paprika salt and pepper to taste optional: cheese (cheddar, mozzarella, feta, goat cheese, etc.) extra: add other fresh, seasonal vegetables from the farmers market such as broccoli, heirloom tomatoes, asparagus, and zucchini

Cooking Instructions

Preheat oven to 350..

Chop all veggies into small 1/2 inch pieces.

Using a 12” non-stick or cast iron pan (oven-safe), sautée the eggplant, onion, bell pepper, and potatoes on low-medium heat until soft, about 15 minutes, stirring occasionally.

Whisk eggs together with paprika, salt and pepper then pour egg mixture into veggie skillet. Shake and stir until all veggies are coated in the egg mixture.**

**Did you know that salting your eggs before cooking results in a creamier, smoother egg texture?

Optional: sprinkle the top with grated cheese.

Bake for 20 minutes, until egg is set and golden brown on the top.

Remove from the oven, let cool, and enjoy!
