Lan-Yap: Cajun flavor comes to Central City

CENTRAL CITY - Central City’s dining scene is about to get a taste of New Orleans as Lan-Yap, a Cajun-style restaurant, prepares to open at 430 Lawrence Street, Unit C. 

Previously home to Dory Dozens Market, this cozy spot promises authentic flavors straight from the Big Easy, with menu staples like red beans and rice, blackened shrimp, shrimp and grits, andouille sausage, and blackened chicken.

Behind this new venture are Martina Cook and Kelly Davis, both seasoned culinary professionals with a knack for creating memorable dining experiences. Cook, known for having owned Nederland’s bygone Mine Shaft restaurant, joins forces with Davis, her former colleague at Wondervu Cafe, to bring their shared vision to life.

"We know the county needs more food options," said the pair. "We’d like to offer that and bring a little joy to the area."

The restaurant takes its name from the French Creole word “lagniappe,” meaning “a little something extra.” 

Fittingly, Cook and Davis aim to deliver a dining experience steeped in goodwill and community spirit. Mardi Gras-themed décor is already starting to fill the space, which will accommodate about 20 diners at a time.

Though still fine-tuning their business model, Lan-Yap plans to open its doors Monday through Friday, with hours tentatively set from 11 a.m. to 4 or 5 p.m. Davis and Cook also hope to expand into catering, eyeing opportunities at local events and venues.

In addition to hearty Cajun classics, Lan-Yap promises treats like beignets and chicory coffee, reminiscent of the iconic Café Du Monde in New Orleans. “We want to recreate that warm, welcoming vibe,” shared the team.

The public has expressed their excitement as well, "Everybody’s stopping in and saying, ‘Hey, I can’t wait!’” Davis enthused.

The grand opening is tentatively scheduled for the first week of December, but the duo hinted they might welcome their first customers even sooner. Until then, the community is buzzing with excitement over this flavorful new addition.

For Central City locals and visitors alike, Lan-Yap is shaping up to be more than just a restaurant – it’s a little slice of Louisiana hospitality in the Colorado Rockies.
