The Farm-to-Table movement has gained a lot of popularity over the last few years with “Farm-to-Table” restaurants popping up along the Front Range, and local farms hosting dinner events. (It really doesn’t get fresher than that, right?!) It turns out that you don’t have to go down the hill for a truly sustainable and delicious Farm-to-Table experience.
The Holistic Homestead is partnering with The Nederland Farmers Market and the Nederland Victory Gardens to bring the best, freshest produce to our mountain communities making Farm-to-Table affordable and accessible for everyone in our community. Buy these locally grown, in-season ingredients at the Homestead Market OPEN Tuesdays -Thursdays 10 a.m. - 4:30 p.m. and Fridays - Sundays 10 a.m. - 6 p.m. to make it yourself, or enjoy a Farm-to-Table lunch EVERY Friday, Saturday and Sunday between 11 a.m. - 4 p.m. at the Homestead Cafe!
Farm to Table Purple Mizuna and Lemon Potato Salad - serves 6 - 8
8 small potatoes, preferably red and/or gold, scrubbed and cut in bite size pieces
2 lemons - 1 juiced and 1 for garnish (optional)
4 large cloves garlic, - 2 cloves peeled and smashed (optional)
2 - 3 cups chopped purple mizuna or other local, freshly harvested leafy greens
1 bunch of spring or green onions
5 Tablespoons extra virgin olive oil
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 teaspoon of onion powder
1 teaspoon of garlic granules
Boil potatoes in water until fork tender. While potatoes are boiling, put lemon juice, garlic, olive oil, salt, pepper, onion and garlic in a bowl and whisk until well blended to make the dressing. Chop spring onions. Toss spring onions with greens and dressing. Drain potatoes. Let cool, toss into the salad et voila!
