Decent Bagel: A Decent Addition

Decent Bagel is a small-batch business located on 1st St., projecting a light atmosphere with homemade delicious NY-style bagels. What started as a simple pink bagel shop has now morphed into a multi-concept space with the addition of Pasta Night Fridays, Sobremesa weekends, and Happy Hour Fri~Sat~Sun. Starting at sunrise, they are a bagel shop, and by the evening Decent transforms into a place to gather with friends over a variety of selections, including tapas and cocktails.

Actual New Yorkers Audrey Gebhardt, Mike Gebhardt and Carl Fritschel were in search of a ‘Decent’ bagel in Colorado and couldn’t find one. Traditional NY style bagels, which are also known as “water bagels,” are boiled just before they are baked. This technique is used to give the bagels a crispy exterior and chewy interior. When the Decent crew moved up to Nederland a few years ago, they originally wanted to buy Happy Trails, but when that didn’t work out they kept thinking about what Nederland really needed. The decision was later made that they wanted to add another food option to town and bring New York to Nederland, selling NY’s iconic bagels. With the crew’s strong passion for skiing, the idea was to open bagel shops in several ski towns. As the business has grown, It has adapted to the possibility of introducing different restaurant concepts in several places that seem well-fitted.

There are so many moving parts in the development of a new restaurant. With a once-in-a-lifetime pandemic at their doorstep, the hard working crew of Decent Bagel managed to adapt to the ever-changing rules and regulations while also trying to stand out as a new business. While a lot of businesses have faced several challenges with the worries of COVID, Decent knew that bagels were a good take-out food for a time like this, especially in joining the Farmer’s Market. Eventually as things seemed to ease up, it allowed them to share more than just their yummy bagels.

With a background of wedding/ event management and their love for the community, they also host private events and help out with every detail. The airy and bright space provides a nice backdrop for any celebration; from showers to rehearsal dinners, holiday celebrations and birthdays. They are happy to be another spot in town for everyone to come and enjoy. With the want to expand, they mentioned they are looking to rent the old Apothecary’s kitchen. With fast growth, Decent Bagel has been a big hit, generating lots of great reviews and delighting customers with every visit.
