Life is a whirlwind, and as it rapidly moves around and around in what feels like a funnel, I catch myself losing control for a brief moment. Luckily, the uncontrollable moments don’t last long and before I know it, I compose myself and everything feels manageable again.
So much has happened since I graduated from school, again. Fortunately, it has all led to unimaginable opportunities, yet somehow, I knew they were coming. I’ve been working hard to improve my situation so it’s no surprise that a better life is finally upon me.
Walking through Downtown Grand Lake, I contemplated where to eat and the pros and cons of all my decisions since December. As scary as some of those decisions seemed, I knew the risks would be worth it.
How did I know? Because I stopped questioning the feeling in my gut. I began to trust the process of every step I took. I also kept asking myself, “What am I good at?” and “What makes me happy?” Then, I asked myself, “How can I do both?”
The answers were easy. The challenge was the “How?” Every day I took one baby step toward turning the answers into fruition. Everywhere I went, I brainstormed until I found the path to the “How?”
I was hungry and made my choice. As I sat in El Pacifico Pho, waiting for my order, I daydreamed about everything I wanted. I envisioned every detail, from my health and happiness to finances and location. Living my life now, makes my recent past feel surreal, in the best way possible.
I had never been to El Pacifico Pho. I took a walk around to admire the decor and peoplewatch. The restaurant’s menu is simple but offers many options for vegetarians and meat eaters.
Though it’s primarily a Vietnamese restaurant, guests can enjoy an array of “Latino Specialties.” They also offer desserts and adult beverages. It’s a cozy place, and though it’s big, it’s easy to find a quiet corner, making it easier to enjoy a peaceful meal.
I also like that the restaurant is a hidden gem in plain sight; perfect for my thoughts and me. And perfect for discovery. Much like so many life experiences, the more I explore different areas of my favorite places, the more I learn about them and myself.
El Pacifico Pho is located at 920 Grand Avenue, Grand Lake. To learn more, visit https://elpacificophoco.com/ or call them at 970-367-1437.
