After a chilly morning of hiking, I found myself daydreaming. I fantasized that I could change the world by doing something I love to do. I pretended that every step I took while hiking meant that I was making the earth a better place.
I sighed as I came to the realistic conclusion that this, like a lot of my thoughts, would remain a pipedream. It’s interesting how life works. Between the conclusion of my hike and trying to find a cafe to have breakfast, I came upon the most inspiring coffee shop in Evergreen.
There is a locally owned company that’s fighting to decrease the environmental impact of worldwide coffee production. How so? Through roasting eco-friendly, naturally processed coffees, while operating with the highest environmental and social standards possible.
The first thing that grabbed my attention was its name, bivouac. The second thing that convinced me to place an order, was the cozy welcome I received. The icing on the cake was discovering the story behind their business. Between my love for Colorado, nature, and writing, I was hooked!
