Where can you get a decent bagel?

There are a lot of former residents of the East Coast (and the “Third Coast”: Chicago) here in the Peakto Peak area, and many of them have often lamented “You just can’t get a decent bagel in Colorado!”

Now that lament is being cut short with the brand new offerings of Mike and Audrey Gebhart, a father and daughter team formerly from New York, who will be having their Grand Opening this weekend for – get it now – Decent Bagel, a breakfast/ sandwich/tapas place located in the little building on the corner of 1st and Snyder that has brought Nederland so much pleasure in the past.

Now pink (“lox-colored,” Audrey says), the restaurant will be offering not only their bagels made the classic NY way – hand rolled, boiled, and baked fresh every day – but also tapas and cocktails in the evenings, in order “to create a new ‘date night’ spot in town for locals.”

The partners moved to Colorado three years ago, where Audrey continued to develop her food service credentials. She started a catering company in high school specializing in baked goods, and soon branched out into full service multi-course dinner parties and events for up to 500.

 

Once in Colorado, the duo focused on “Grazing Tables,” which really took off but dropped off when the pandemic hit. After slowing down catering in 2020, Audrey and her boyfriend, opened a microwedding venue in Rollinsville.

In the off season (winter), “we were considering how nice it would be to have a ‘Decent’ bagel in Ned on our way up to Eldora for ski days. We got to work on a recipe and created a product we were thrilled with.”

They were a hit at the Farmers Market over the summer, and they now look forward to continuing “to connect with this lovely community and share delicious food with people.” They hope their efficient service will attract commuters on their way to Boulder or the many recreational venues in the area.

For the Grand Opening this weekend, in addition to their regular bagels and sandwiches, they will be serving the Secret Garden bagel, an open faced bagel served with cream cheese, heirloom tomato, cucumber, pickled shallot and flake salt. This was a huge hit at their soft opening, and they are excited to share it this coming weekend as well!
