This is a delicious, healthy fresh summer salad that can be mixed with a variety of ingredients. You can add cashews or almonds for extra protein.
In a bowl, mix:
2 c. shredded red cabbage
1 c. thinly sliced broccoli, peel the outer thick layer from stalk and julienne the tender inside
1/4 c. each julienne of carrots and red pepper
3 Tbsp chopped green onion
3 Tbsp chopped cilantro
1 Tbsp black sesame seeds (if
using white, lightly toast them)
Sesame/Soy dressing
In a separate bowl, mix together:
3 Tbsp soy sauce, 1 Tbsp rice wine vinegar, 2 tsp toasted sesame oil, juice of 1/2 lemon, pinch of crushed red pepper (or to taste). Pour over slaw and mix well. Let it sit for 15 minutes before serving.
