Recipe of the Week: 10-Minute Golden Miso Salmon

Who doesn’t love a recipe for a delicious main dish that’s ready in just 10 minutes?

1/4 cup red or white miso paste

1/8 teaspoon ginger powder

1 teaspoon minced fresh rosemary

2 large cloves garlic, pressed or finely minced

4 thick salmon filets with skin, about

6 oz each (we recommend sustainably sourced, wild Alaskan sockeye salmon from Epick Seafood)

2 teaspoon Turmeric powder

3 Tablespoon cold pressed, extra virgin olive oil 2 Tablespoon sesame seeds, toasted

Preheat the broiler. Mix together the red miso, fresh minced rosemary, ginger powder, pressed garlic, and 2 tablespoons of water to create a paste. Rinse salmon filets under cold water and pat dry. Place salmon on a rimmed baking sheet, skin side down. Rub the paste on top of the salmon filets and then sprinkle the turmeric powder evenly over the top of the paste. Drizzle tops with olive oil. Broil 5 inches from the heat for 2 minutes. Turn off the broiler and set the oven to 500F, keeping the salmon inside the oven. Roast the salmon for 5 minutes, until just firm. Enjoy! The Nederland Farmers Market season is quickly approaching and we cannot wait to see all of your smiling faces! This year’s Markets will be held every other Sunday, starting on Mothers Day, May 8, from 10 a.m. - 2 p.m. and ending on Sunday, October 2 with our annual Harvest Festival, from 10 a.m. - 3 p.m.

Quick Salmon Serving Ideas

Combine leftover cold salmon with greens and other vegetables for a delicious salad.

For a healthy appetizer, serve smoked salmon on a platter with pickled asparagus (Mountain Girl Pickles anyone?), onions, capers, lemon wedges, and mini rye bread slices.

For a twist on scrambled eggs, combine eggs with lox and onions-- a classic New York delicatessen breakfast favorite.

Did you know?

Salmon is an excellent source of protein, potassium, selenium, and vitamin B12. Wild salmon has 13 grams of fat, with 1,000 milligrams of EPA and 725 milligrams of DHA per serving. Wild caught salmon is 20% higher in protein than farmed salmon, as well as omega-3 fatty acids. Other benefits of omega-3 fatty acids is the ability to reduce the body’s inflammatory responses; hydrates hair. skin, eyes and nails from the inside out; and supports healthy brain functions.

Cold-water fish, like wild Alaskan salmon, have been shown to benefit healthy cardiovascular, immune and nerve function. They also tend to be one of the cleanest sources of fish, typically containing lower levels of heavy metals and pesticide residues. A big concern regarding fish farms is, not only do they tend to produce fish with higher levels of pesticide residues, they’re also potentially affecting the wild salmon gene pool, by farmed salmon escaping into the wild. Biologists fear these invaders will outcompete Pacific salmon for food and territory, quickening the decline of wild salmon populations.
