It’s fall, and time, it seems, for all things pumpkin. Here’s an easy recipe from MarketGrow for a delightful seasonal treat. It embodies the very essence of “pumpkin spice.”
Ingredients:
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 1/2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 cup pumpkin puree
1/2 cup vegetable oil
2 large eggs
1/4 cup milk
1 teaspoon vanilla extract
1/2 cup chopped nuts or chocolate chips (optional)
Instructions:
Preheat oven to 350°F. Grease a 9×5-inch loaf pan or line it with parchment paper.
In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves until well combined.
In a large mixing bowl, beat together the granulated sugar, brown sugar, pumpkin puree, and vegetable oil until smooth. Add the eggs, one at a time, mixing well after each addition. Stir in the milk and vanilla extract.
Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Do not overmix.
If using, fold in the chopped nuts or chocolate chips.
Pour the batter into the prepared loaf pan, smoothing the top with a spatula. Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center of the bread comes out clean.
Allow the pumpkin bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
