Pimento Cheese

One of the two crowning glories of Southern cuisine. (The other is biscuits and gravy…wanna argue about it?) Easy to make; even easier to eat. (I’ve been known to spoon it out of the bowl.) This will last a week in the refrigerator, but—trust me—it will be gone before that. Enjoy!

  

Ingredients

2 cups sharp cheddar cheese, shredded

1 cup mayonnaise

1 jar (4 oz) diced pimentos, drained

1 teaspoon onion powder

1/2 teaspoon garlic powder

1/4 teaspoon cayenne pepper (optional, for a little heat)

Salt and pepper, to taste

1 teaspoon Worcestershire sauce

1/2 teaspoon smoked paprika

Instructions

1.     In a large mixing bowl, combine the shredded cheddar cheese, mayonnaise, and diced pimentos. Stir until well blended.

2.     Add the onion powder, garlic powder, cayenne pepper (if using), salt, pepper, Worcestershire sauce, and smoked paprika. Mix until all the ingredients are thoroughly incorporated.

3.     Taste the mixture and adjust the seasoning as needed. Add more cayenne pepper if you like it spicier, or more mayonnaise for a creamier texture.

4.     Cover the bowl with plastic wrap and refrigerate for at least an hour to allow the flavors to meld together.

5.     Serve chilled as a dip with crackers or veggies. Spread it on bread for a delicious sandwich. Makes great cheeseburgers!
