This simple dish from my childhood is far more delicious than its humble ingredients imply. Use any short pasta. Bow ties are traditional, but go ahead and explore the wonderful world of pasta shapes!
Ingredients:
1 (16 oz) package short pasta (penne, bow ties, rotini, etc.)
1 (16 oz) container small-curd cottage cheese
3 - 4 Tbsp sour cream or plain Greek yogurt (optional but recommended)
salt and pepper, to taste
Parmesan cheese, fried onions, chopped parsley, to garnish (optional)
Instructions:
· Bring a large pot of salted water to a boil, and cook the pasta according to the package instructions.
· Drain the cooked pasta well and add it back to the hot pot.
· Add the cottage cheese to the pasta and stir until all of the noodles are well coated.
· Add sour cream/yogurt, if using, and salt and pepper to taste. Stir until well combined.
· Serve hot. Garnish the dish with Parmesan cheese, fried onions, or chopped parsley.
