3 Tablespoons butter
1/4 cup celery
1/4 cup onion
1/4 cup green pepper
3 oz. cream cheese
1 cup fine bread crumbs
2 Tablespoons lemon juice
Salt and pepper
2 dozen fresh button mushrooms
Remove mushroom stems and rinse mushrooms. Set them aside to dry. Finely chop celery, onion, and green pepper and cook in butter until slightly cooked. Mix together with cream cheese, bread crumbs, lemon juice, and a pinch of salt and pepper. When cool enough, stuff this mixture into the mushrooms. Bake at 350 degrees F for 10-15 minutes. Makes two dozen.
