Spring is springing all around us. That means it’s time for our seasonal markets to begin. Here is a favorite, simple recipe for a delicious side dish that goes great with a backyard BBQ.
2 c. green beans
Salt and pepper
2 TBSP 1/2 olive
1/2 avocado oil for roasting
handful whole cherry tomatoes
2 TBSP thinly sliced garlic
2 TBSP chiffonade of basil
***(this is a traditional French way to chop up basil. Align the leaves so they lay flat on top of each other to create a stack. Then roll the stack so the stem of the leaves stay in a line down the middle of the roll. Slice the roll across to create thin ribbons of basil. Ultimately , this makes it easy to remove the “stemy” parts of the leaves and will not bruise the basil) 1/4 c. breadcrumbs, 1 TBSP olive oil, salt and pepper ( *optional : add 1/4 c. parmesan). Toss together in small bowl
Heat oven to 425. Toss green beans with 1 TBSP of the oil mix, salt and pepper. place on a roasting pan. I like to use crushed red pepper when I’m cooking Italian style dishes, if you have it, otherwise, black pepper is fine. For best results, do not over crowd and leave some space to add tomatoes and garlic. After about 5-8 minutes, when the beans look like they are starting to cook down, toss the cherry tomatoes and garlic with oil mixture and add to the beans. Cook until the tomatoes start to split or get soft and the garlic starts browning. Another 5 minutes or so. Salt and pepper to taste and toss with basil.
To finish: put the beans/tomato/ garlic into a casserole dish and layer the seasoned breadcrumbs on top. Put back into the oven until the breadcrumbs turn golden brown. 3-5 minutes. ENJOY!
