Feeling guilty about having a sweet tooth? Baking homemade treats makes it easier to control what’s in your food, allowing you to enjoy a delicious treat without all the guilt.
Ingredients:
Cream cheese, softened
Sugar or sugar substitute (Monk fruit, erythritol, stevia)
Eggs
Lemon juice
Pure vanilla
Vanilla wafers
Fruit pie filling (use low sugar if you can find it) or fruit jam
24 cupcake liners
Two cupcake pans
Directions:
Preheat oven to 375°F
Combine:
Two 8 ounce blocks of cream cheese
3/4 cup of sugar or sugar substitute (or equivalent; check packages of sugar substitute for equivalent amounts)
2 eggs
1 Tablespoon of lemon juice
1 teaspoon of vanilla
Beat until light and fluffy.
Line 24 small muffin cups and place a vanilla wafer in each.
Fill cups about 2/3 full with cream cheese mixture.
Bake for 15-20 minutes until set.
Top each cup with about 1 Tablespoon of pie filling or minced fruit/jam.
Chill for at least one hour before serving.
