Ingredients:
2 cups cooked chicken – diced or shredded (rotisserie chicken works great)
2 cups cooked rice
1 can green chilies (4 oz)
1 can cream of chicken soup
1 tub of sour cream (8 oz)
2 cups shredded cheese
Salt and pepper, to taste
Optional: add spices to taste – suggestions include; chili powder, chipotle powder, cumin, garlic powder, onion powder
Instructions:
Preheat the oven to 375 degrees.
Mix together all the ingredients, except 1/2 cup of cheese.
Put mixed ingredients in a 9”x11” casserole dish.
Top with remaining cheese.
Bake for 25 minutes.
This is a great meal to put together on a cold winter evening.
