For anyone who is a fan of gently spiced and healthy meals, this arugula salad is sure to leave you craving more. It’s a perfect light meal for lunch or dinner.

Ingredients:

Honey-Lemon vinaigrette

Toasted walnuts

Fennel

Arugula

1-2 pears

Directions:

Slice pears (put in cold water to prevent browning).

Shave the fennel very thin.

Toast walnuts in the oven at 400 degrees for just a few minutes until golden brown.

Keep checking and stirring nuts, they can burn quickly.

Toss everything together.
