Crockpot Greek Chicken
A crockpot or slow cooker is an incredibly useful kitchen tool here in the mountains. You can throw together dinner quickly before going out skiing…or if you are home all day, you can fill your home with wonderful aromas as you go about your housework. But this dish can be cooked just as easily without the crockpot. Just put the ingredients in a Dutch oven or other heavy covered pot and put it in a slow (225℉) oven all day.
Ingredients:
1 cup plain Greek yogurt
2 Tablespoons fresh lemon juice
pepper, cane sugar, garlic powder, grated lemon peel from one lemon, onion powder, oregano – to taste, about 2 teaspoons total
1/2 tsp kosher salt
2 Tablespoons extra virgin olive oil
2 pounds boneless skinless chicken breasts
Fresh parsley and lemons for garnish
Instructions:
In a small bowl, whisk together the Greek yogurt, lemon juice, spices, and salt.
To a slow cooker, add the olive oil, chicken breasts, and half of the yogurt mixture.
Cover and cook on low for 6-8 hours.
Before serving, drizzle the chicken with the remaining yogurt sauce and garnish with fresh parsley and lemon slices.
